WARNING:Making these Double Rum Hemp Chocolate Truffles will surely make you the most popular person at every Christmas gathering you go to. Good luck! Ingredients: 1 cup raw pecans 1 cup Planet Hemp Seeds 2 Tbsp cacao powder or unsweetened cocoa powder 1/4 tsp sea salt 1/2 tsp ground cinnamon (optional) ½ tsp vanilla ¼ tsp ginger powder 10 medjool dates, pitted (if dried out, soak in warm water for 10 minutes then drain) 1 tsp coconut oil 1 Tbsp maple syrup 1 Tbsp Planet Hemp Vanilla Chai Protein powder 3-4 oz rum For Chocolate Dipping Sauce: 1 cup finely chopped cacao butter ¼ cup maple syrup 1 cup cacao powder or paste Instructions: 1. Place pecans and hemp in a food processor or high speed blender and process until it reaches the consistency of a meal. Remove and set aside in a dish. 2. Next, place pitted dates in the food processor and process until small bits remain and/or it forms into a ball. 3. Then add in the cocoa powder and 1/2 of the nut meal and pulse. Continue pulsing and adding the nut meal and the rest of the ingredients until dough is formed. 4. Once you have a dough that's easy to form into balls, scoop out 1 Tablespoon amounts and roll/carefully form into balls. (If they aren't quite forming, put in the freezer until solid. Set on parchment paper and place in freezer to chill - you should have about 14 truffles. 5. In the meantime melt chocolate in a double boiler Be careful not to overheat. Once melted, stir in cacao butter to help the chocolate thin and ease the dipping process, then add 2 tbs maple syrup. 6. Remove truffles from freezer and, one at a time, dip them into the melted chocolate. Use a fork to remove them and tap away excess chocolate. Transfer back onto parchment paper and top with hemp seeds! 7. Repeat until all truffles are dipped. Let set at room temperature. Store leftovers in an airtight container at room temperature. Transfer to freezer for longer term storage.

These sweet beauties are a wonderful high protein treat! Great for pre or post workout, a snack Recipe: 1 cup Planet Hemp Seeds 2 X eggs 1 cup peanut butter 1/2 tsp baking powder 1/4 cup coconut sugar 1/4 cup black sesame seeds (if desired) Raspberry Jam (or other desired jam) Roll into balls and press the cookie down with two fingers then create a hole in the middle for the jam. Making sure not to go all the way through. Bake for 15 minutes at 350 degrees and put onto a bakers rack to cool. Makes 18 little nests!

Ridiculously Delicious (and simple) Hemp Oil Dressing: 2 tbsp Hemp Seeds ½ cup Hemp Oil ½ cup olive oil 2 tbsp apple cider vinegar 1 tbsp balsamic vinegar 1 tsp maple syrup 1 tsp Dijon mustard squeeze of ½ a lemon salt and pepper to taste Directions: Blend and adjust to taste. Eggplants are one of those delicious, weird, wonderful vegetables that are in season right now and MOST people I know have no idea how to cook them. So in honour of all the eggplants that are in season right now, here is my famous Rosemary Eggplant Stew... and by famous I mean, Charles LOVES it! Savory Eggplant Stew 1 small to medium eggplant 3 medium red potatoes 1 red bell pepper 1 small sweet onion cut in chunky pieces ½ dozen roasted garlic cloves (baked ahead of time) Wrap in foil, drizzle with olive oil. ¼ cup sun-dried tomatoes 1 bay leaf 2 sprigs rosemary Celtic salt and pepper to suit your taste 1 cup vegetable broth 1 tbsp Bragg Liquid Aminos In a sauce pan melt 1 tbps coconut oil and lightly saute eggplant and sweet onion. Then add to a roasting pot along with all the remaining ingredients. Bake in oven at 350F for 1 hour. Select 3 to 4 veggies from the list below to create your perfect summer salad. 1 medium zucchini ¼ spaghetti squash or yellow/orange squash 1 large beet 1 large carrot 1 daikon radish 1 medium jicama root Shredded cabbage Quartered cucumber pieces Snap peas and pea sprouts, sunflower sprouts Garnish with: fresh chopped parsley, cilantro, chopped green onions, sliced black olives, hemp seed nut, toasted sunflower seeds and sprinkle a wee bit of Wakame dried seaweed, soaked for 10 minutes (rich in iron, calcium, iodine.) Use a spiralizer or vegetable peeler. Arrange your vegetable selections on a serving platter in separate little attractive piles…enough for two. Complete your summer salad by making this Miso Avocado Sauce w/ Fresh Basil. 1 large avocado 2 tbsp light miso (Shinmeido miso) See resources. 2 tbsp Nama Shoyu or Bragg liquid aminos (not raw) 1/4 cup hemp seed oil 1/4 cup fresh lemon juice 1/4 cup fresh basil chopped 1/4 cup seaweed soak water Pulse blend in food processor leaving little bits of basil showing in sauce. Spoon on top of summer salad or leave on the side. A hearty meal indeed.

Leafy Salad w/Sundried Olives Since it's summer, we thought we'd share one of our favourite summer salads with you. In a big salad serving bowl add: A few big handfuls of Organic Power Greens (from your local markets) 2 tomatoes cut in wedges diced cucumber a few leaves of dandelion greens Add raw sundried olives – as many as you want – they are so healthyand delicious Sprinkle with hemp seed nut Toss with Green Earth salad dressing Green Earth Salad Dressing 1 cup hempseed oil 1 ½ tbsp lemon juice 2 tbsp balsamic vinegar 1 tbsp almond butter 1 tsp maple syrup 1 tsp fresh rosemary (crush rosemary with Celtic salt) ½ tsp fresh thyme Pinch of fresh ground pepper corns Mix all ingredients well.
